Shamrock, signature cuisine

Rodrigo Vallejo, the chef of Shamrock Palma, has been showing off his great expertise, combined with his energy and his unique perspectives, for some time now. Vallejo is a two-time winner of TaPalma 2017, with a culinary delicacy made with local ingredients entitled ‘Picnic’, as well as his “Vermouth with red endive”, which is also based on local ingredients including vermouth. These are two clear examples of the fine work of a well-known chef who is continuing to expand his professional horizons at Shamrock.
As a native of Santander, Vallejo received his training at the city’s School of Catering and now boasts a great deal of experience, both internationally, given his work at the Restaurant Noma in Copenhagen (an establishment with two Michelin stars, hailed as the best restaurant in the world for several years), and at home in Spain, having formed part of the teams of a number of top-notch establishments including Mugaritz and Martin Berasategui, among others….
